The tofu can be cut into cubes with a modified knife. I cut it into thick slices.

If the meat is not 3 fat and 7 lean, add a little light soy sauce and corn starch to marinate it.

When the oil is hot, add the minced meat and stir-fry until it changes colour. Add minced garlic, minced ginger and Pixian bean paste and stir-fry until fragrant. Pour in the tofu, add a small bowl of boiling water (stock is better), and simmer over low heat for 3 minutes

Collect the juice, add salt, chicken essence and green onions, and remove from the pan.
