Fried potato slices with old cucumber
Overview
Old cucumbers are not only crisp, tender and fragrant, but also contain more nutrients than tender cucumbers. Compared with tender cucumbers, old cucumbers contain more minerals such as vitamins A, C and potassium. Regular consumption can delay skin aging and the formation of wrinkles.

My old cucumbers are not particularly old. You can buy the ones with very yellow skin, which are more delicious.

Peel the old cucumbers, remove the flesh, cut them into quarters, and then slice them diagonally. Peel and slice the potatoes as well.

Chop red pepper, onion and garlic and set aside.

Put 2 tablespoons of salt in the water in the pot. After the water boils, add the potato slices and cook for 2 minutes.

Then add the old cucumber slices and boil together without removing the potato slices. Remove and put on a plate for later use.
