Potato cakes (potato pancakes) that both adults and children love
Overview
I don’t know if this is a local specialty. I have never seen this dish before, but my mother-in-law often makes it and finds it delicious. My children and I often start eating it as soon as it comes out of the pot. Then I thought about it and made it myself, and I felt that the taste was no worse than what my mother-in-law made.

Ingredients
Steps
-
Wash the small potatoes, put them directly into the pot and cook them with salt
-
After cooking, pour the potatoes out directly and use a kitchen knife to gently flatten the potatoes (this will give us the shape)
-
Turn on the fire. I used the Teppanyaki function (if you don't have it, you can just use a pot). After it's hot, pour in an appropriate amount of salad oil (not a lot), and when the oil is hot, add the potatoes (note that the Teppanyaki function uses high heat throughout the process. I tried medium heat here and found that the temperature was not enough and changed it back to high heat. If it is a gas stove at home, medium heat will be used here).
-
Wait until one side is golden brown, then flip over and continue
-
When both sides are golden brown, sprinkle an appropriate amount of pepper and salt, then turn over and continue to sprinkle an appropriate amount of pepper and salt (I just sprinkle it on each potato)
-
Sprinkle in the chopped green onion and continue frying for a while. When you smell the aroma of green onions, take it out of the pan and put it on a plate
-
The fragrant potato pancakes are complete. Come and have a piece if you have no problem. Both adults and children love to eat it. It is also the best choice to accompany wine and food.
