Sweet Potato Vegetable Rice
Overview
Vegetable rice is a special delicacy in my hometown of Shanghai. My mother often made it when I was a child. She cooks various vegetables with rice, and you can also add some bacon sausage. It has a unique taste and is healthy and reduces fat. Nowadays, green vegetables and moss are on the market in large quantities, so you can enjoy them all.

Wash and chop the green cabbage moss and set aside.

Peel and cut sweet potatoes into cubes.

Wash the rice and soak it for 2 hours in advance. The amount of rice soaking water should be the same as the amount of cooking water.

Cut the carrots into cubes and stir-fry them first, using the same amount of oil as you would for stir-frying vegetables.

Add green vegetables and sweet potatoes and stir-fry.

When the vegetables become soft, add the rice along with the water and season with salt and light soy sauce. No additional water is needed.

Continue to stir-fry until the water in the pot boils, then use the surface of a spatula to flatten lightly.

Cover the pot, turn to the lowest heat, wait five minutes, and then tilt the pot clockwise in four directions: left, right, up and down, for five minutes in each direction. After two rounds, the pot is ready to serve.

This method can also be eaten with crispy rice.
