Remove the roots of the shiitake mushrooms and wash them, cut the tops into cross-cut pieces and set aside

Cut green onions into sections, put green onions, oyster sauce, light soy sauce, chicken essence, white sugar and water into a small bowl to make a juice

Add water to the pot, add salt after the water boils, add mushrooms and fried tofu, blanch for 2 minutes, remove and set aside

Heat oil in a pan and add blanched mushrooms

Pour in the sauce, turn to medium to low heat and simmer

Cover the pot and simmer for 3 minutes

Add water starch to thicken the gravy and take it out of the pot

Pour the soup from the bottom of the pot onto the plate
