Wash the lotus root slices and soak them in water for two minutes

Put it into a pot and add boiling water, one-half teaspoon of salt, and half a teaspoon of vinegar (the salt is added to provide a base of salt, and the vinegar can prevent the lotus root from oxidizing and turning black)

Bring to a boil over high heat and simmer for three minutes until cooked through

Drain out and set aside

Pour the lotus root slices into a container, add one teaspoon of very fresh soy sauce, half a teaspoon of Sichuan pepper oil, two teaspoons of Laoganma, minced garlic, chopped green onion and rice vinegar and mix well
