Overview
A friend gave me two boxes of cherries. After opening them, I found that the taste was not particularly sweet. I felt that if I couldn't eat them, they would probably be thrown away, so I decided to use them to make cherry jam.

Wash the cherries, cut them into two pieces, remove the pits, and marinate them with sugar for three to four hours.

Put the pickled cherries into the pot, add the powdered rock sugar, and bring to a boil over medium heat.

When half of the water in the pot is removed, add the squeezed lemon juice.

When the juice in the pot is almost gone, add 2 tablespoons of maltose and continue cooking until the consistency you require.

The taste of the finished product is not overly sweet. It is slightly sweeter and can be used to make water, spread on bread, make pastries, etc.
