Ingredients preparation: minced meat, eggplant, cowpeas, garlic cloves.

Add salt, cooking wine, light soy sauce and starch to the minced meat, mix well and marinate for 10 minutes.

Tear the eggplant into small pieces with your hands, add salt, mix well and marinate for 10 minutes, squeeze out the water.

Cut the cowpeas into segments.

Heat oil in a pan until it is 50% hot, add minced meat and stir-fry until it changes colour.

Add minced garlic and saute until fragrant.

Add the marinated eggplant and stir-fry.

Add the beans and stir-fry, add appropriate amount of water and cook until the beans are cooked, add a little light soy sauce to taste.
