  1. Wash the chicken feet and trim off the toes.

  2. Chop the chicken feet into two pieces.

  3. Place on a plate and set aside.

  4. Shred the ginger, chop the garlic cloves, and cut the green onions into sections. Prepare star anise and peppercorns. (I forgot to take a picture)

  5. Heat the pan and add oil. When the oil is hot, add shredded ginger, minced garlic, star anise and pepper and saute until fragrant.

  6. Pour in the chicken feet, add a tablespoon of bean paste, an appropriate amount of salt, and a tablespoon of cooking wine and stir-fry until fragrant.

  7. Add water, enough to cover the chicken feet. Bring to a boil then reduce to a simmer.

  8. When the juice is almost reduced, add an appropriate amount of soy sauce and chicken essence and stir-fry a few times.

  9. Add the green onions and stir-fry for a few times.

  10. Remove from pan and plate.
