  1. Soak kumquats in baking soda and water for half an hour, then wash and drain.

  2. Cut the kumquats and remove the seeds.

  3. Use a cooking stick to beat the kumquat meat at low speed into a puree. It doesn't need to be too fine, but has some granular texture. Add sugar to a non-stick pan and mix well.

  4. Turn on low heat and simmer slowly, stirring constantly to prevent sticking.

  5. Boil for 10 minutes, squeeze in lemon juice and cook for another 5 minutes.
