Soak kumquats in baking soda and water for half an hour, then wash and drain.

Cut the kumquats and remove the seeds.

Use a cooking stick to beat the kumquat meat at low speed into a puree. It doesn't need to be too fine, but has some granular texture. Add sugar to a non-stick pan and mix well.

Turn on low heat and simmer slowly, stirring constantly to prevent sticking.

Boil for 10 minutes, squeeze in lemon juice and cook for another 5 minutes.
