Pan-fried three-silk tofu skin roll---unexpected mix and match
Overview
I have been preparing for decoration recently, and the number of visits to the vegetable market has been significantly reduced. I don’t know what to eat every day. I went to the building materials city for two days on the weekend and did not go to the vegetable market. I didn’t go shopping this morning. I simply cooked multi-grain porridge and ate leftover steamed buns for lunch. After the stock market closed at 3 o’clock, I had to prepare dinner again. I opened the refrigerator and found that there were only dried tofu skins, eggs, sausages, tamagoyaki tofu, and a few potatoes. I was thinking about what I could do with these vegetables. It must be nutritious, simple and easy to make, and satisfy the visual aesthetics. It really tested my imagination. When I took another look at the dried tofu skin, a food model that can be used as both a staple food and a dish appeared in my mind, and that is today’s homemade mix of pan-fried three-shredded tofu skin rolls.

Set aside dried tofu skin, two eggs, fungus, one sausage, and one potato

Beat an egg into egg liquid, spread it into a pancake and cut it into strips, cut the sausage into thin strips, cut the soaked fungus into shreds, and cut the potatoes into shreds

Put the potato shreds into the pot and stir-fry. Add the fungus shreds and stir-fry together. After frying, take out the fungus and potato shreds and set aside

Take a piece of dried tofu skin and cut it into a rectangle 15cm wide and 20cm long (you can also make a rectangle of any size)

Take a piece of cut dry tofu skin and spread it out, put the shredded potatoes, fungus shreds, egg shreds and sausage strips into the dry tofu skin

Roll into dry tofu skin rolls

Put the dried tofu skin rolls into egg wash and coat with a layer of egg wash

Dip the tofu rolls coated in egg wash with bread crumbs

Heat oil in a pan, lower the heat, and put the tofu rolls dipped in bread crumbs into the oil pan

When the color turns brown, flip it over and fry the other side.

After the overall color turns yellow, take it out and let it cool

Cut in half and serve on a plate
