My mother dried the brine-dried beans herself, and now that the weather is nice, I can dry them more. Salted tofu is made by cutting fresh tofu into thicker pieces, salting it thoroughly with a lot of salt, and then drying it in the sun. It will not grow moldy if left for a long time.

Slice the dried beans and soak them in water until soft. The ones I dry myself are very salty and hard for fear of mold growing. I need to soak them before frying to make them taste better. If I buy them from the market, they won’t be so hard.
