Lemon Cookies
Overview
I bought a few lemons a few days ago, and they will be wasted if I don’t eat them. I used them to make lemon cookies, which are sour and sweet, and are very simple to make.

Wash the lemon with salt and wipe dry.

Take a small amount of lemon peel, do not use the white one, which will have a bitter taste, and chop it finely.

Soften butter, add sugar, salt and stir evenly.

Add lemon juice and mix well.

Sift in the flour.

Add lemon zest.

Knead evenly and arrange into a rectangular shape, put it into a plastic bag and put it in the refrigerator for 1 hour.

Remove the slices.

Place on baking sheet.

Place in the middle rack of the oven at 175° and heat up and down for 15 to 20 minutes.
