Mushroom Pumpkin Cup
Overview
This dish uses Beibei pumpkin, which is soft, glutinous and sweet. The easiest way to eat it is to steam the whole pumpkin in a pot for about 15 minutes, then cut it into pieces and eat it with the skin. It tastes like chestnuts. Today I’m sharing another way to eat it. Patients with stomach problems are also suitable to eat pumpkin, because the pectin contained in pumpkin can protect the gastrointestinal mucosa from being irritated by rough foods and promote the healing of ulcers.

Steps
-
Use a brush to clean the pumpkin skin, then put the whole pumpkin into the pot and steam it for about 15 minutes. Chopsticks can be inserted easily.
-
After the pumpkin has cooled slightly, use a knife to cut off the top of the pumpkin and scoop out the seeds and meat inside
-
Put the pumpkin seeds into the wall breaking machine, add a small amount of water, and beat into a smooth pulp and set aside
-
Wash the mushrooms and cut into thin strips
-
Pour oil into the wok, add mushrooms and fry for a while, add seasonings and stir well, then pour in pumpkin pulp and cook until slightly juicy and turn off the heat.
-
Mix the fried mushrooms and pumpkin meat
-
Put it into the pumpkin shell, add some white sesame seeds and it's done. (Eat all the pumpkin shells so that the nutrients of the skin and seeds are absorbed. Only by eating whole foods can you get the most nutrients.)
