Almond cookies (pan version)
Overview
This one is meant to be eaten as a snack. Almonds and soy milk go well together. I don’t dare to eat baked ones as they tend to cause irritation. This one is delicious but not irritating. Highly recommended!

Soak beans for 3 hours.

Beat into soy milk.

After filtering, boil it in a pot and cook for 3 minutes to remove the beany smell and bean poison.

Take the egg white and add appropriate amount of sugar.

Pour in the flour and stir while adding soy milk (the soy milk should be left to dry).

Mix it into a paste. After the pot is hot, reduce the heat to low. Use a small spoon to scoop out a spoonful and spread it out. Keep it in a round shape. When the bottom side is about to solidify, insert the larger end of the almond diagonally on the cake.

Fry slowly until completely cooked. Remove from the pan.
