Overview

During the weekend break, I baked toast at home and planned to slice it into Huo Shaoyun toast, but it is also delicious when eaten directly. The flour I used in Hetao does not absorb water well, so I added 20 grams less water.

  2. After the dough is kneaded, take out the dough and put it on the chopping board and throw it. This will help the dough to form a film better. After a few minutes, use a scraper to cut a small piece of dough. If you can get a very thin glove film, it will be fine. If it doesn't work, just continue to throw it.

  3. Place the mixed dough in a clean basin, cover with plastic wrap and ferment at room temperature. When the dough has doubled in size, dip your fingers in dry flour and poke a hole in the middle. If the dough around the hole does not shrink, it means it has fermented in place.

  6. Take a piece of loose dough, with the smooth side on the bottom and the rough side on top. First, use your hands to draw the two sides toward the middle to form an oval-shaped dough. Then pat it to release the air. Finally, use a rolling pin to roll it into a ox tongue shape. Be careful when rolling. Note that you cannot use too much force. You must start from the middle and roll upwards, then start from the middle and roll downwards. You cannot roll from one end to the other. After rolling, roll it up 1.5-2 times from the top or bottom.

  9. Let the dough ferment until it is 9 minutes full. Set the oven to the baking function, with the upper heat at 170 degrees and the lower heat at 150 degrees. Preheat for 5 minutes. Brush the surface of the toast with egg wash, put it in the preheated oven, and bake for 35 minutes.

  10. Take out the bread immediately after baking, unmold it, put it on the grill until it is warm, and bag it. If you slice it, wait until it is cool before cutting.
