Peel the loofah and cut into equal-sized segments. Set aside.

Pour cold water into the pot and steam for 5 minutes after the water boils.

Prepare the sauce. Here we use oyster sauce, light soy sauce, sesame oil and umami juice. Prepare evenly and set aside.

Sauté appropriate amount of scallion, star anise, peppercorns and ginger in oil. When the scallions turn yellow, remove the peppercorns and star anise ginger, leaving only the white part of the scallions.

Leave a little base oil, add minced garlic and stir-fry until golden brown and serve.

Arrange the loofah neatly on a plate, pour the prepared sauce and finally pour the fried minced garlic oil until crispy on the loofah.
