Purple sweet potato buns
Overview
The steamed buns with purple sweet potato filling that I made this time still used the flower heart potatoes I bought. There was no fried filling and no sugar added. The steamed buns are filled with dough and have the unique aroma of purple sweet potato. They are slightly sweet and can be eaten directly. They are also good with side dishes.

Mix flour with yeast and appropriate amount of warm water to form a smooth and soft dough and ferment until it is more than doubled in size. .

Peel the steamed purple sweet potatoes and press into puree, then hand-roll them into balls of about 30 grams each

Deflate the fermented dough and knead it evenly, divide it into small pieces of about 50 grams each, flatten them gently with your hands, and organize them into dough pieces that are thick in the middle and thin at the edges.

Turn the seam side down, let it rise until slightly puffy, then steam it in a steamer for about a few minutes.
