Wash the soaked soybeans with water and pick out the bad beans, then pour them into the drain basket and shake them up and down on the chopping board to shake off the excess water on the surface of the beans
-
Prepare a pressure cooker, pour some water in it, and pour the beans into a stainless steel container. Beans cannot be boiled directly in water, they must be steamed over water.
-
Cover the pressure cooker, turn on high heat first, wait until the pressure valve lifts up, then turn on medium heat and steam for 50 minutes
-
During the process of steaming beans, prepare 12 pieces of fermentation film
-
Place 12 pieces of fermentation film on a plate and 12 boxes containing beans in a cooking pot for sterilization
-
Put a spoon and plate clamps in the cooking pot, and a pair of chopsticks. Put water in the cooking pot

Boil a pot of boiling water, prepare the natto machine, and scald the natto machine with boiling water to sterilize it
-
Prepare a clean basin, place the stainless steel rack on top of the natto machine in the basin and scald it with boiling water to disinfect
-
Prepare natto
-
After the beans are cooked and the pressure limiting valve of the pressure cooker is out of air, open the lid, take out the beans, drain the water in the pressure cooker until it is clean, and then pour the beans in
-
The steamed beans should be able to be broken into pieces by gently squeezing them with your hands
-
Prepare a small cup, scald it with boiling water and sterilize it, then take a small spoon (provided when you buy the natto machine), put a small spoonful of natto bacteria in it
-
Pour ten milliliters of hot water into a small cup and stir to dissolve
-
Pour the melted natto bacteria directly into the steamed beans and stir evenly. Be sure to stir evenly so that each bean is coated with the natto bacteria
-
Prepare the box containing the natto bacteria
-
Put the mixed beans into the box, no longer than one line inside the box
-
Put sterilized film on the box
-
Use a film press to gently press the film into the box. When you press it down, it doesn’t have to be all the way down
-
Make six boxes in sequence and put them on the first shelf of the natto machine
-
Then make the next six boxes and place them on the second layer

Turn on the power and press the natto function
-
Take it out of the natto machine after 18 hours
-
Take out the natto, cover it and put it on the table to let it cool down naturally, usually about ten minutes
-
After cooling, place it in the freezer of the refrigerator for 24-36 hours. This process is called after-ripening. This step is very important
-
After ripening, take the natto out of the refrigerator and peel off the film
-
Use chopsticks or a stirrer to stir a few times and a lot of mycelium will come out
