Prepare ingredients and weigh all ingredients. 200 grams of black sesame seeds, 280 grams of walnut kernels, 120 grams of red dates, 280 grams of maltose, 50 grams of brown sugar, and 30 grams of wolfberry.

Peel the red dates and cut into small pieces. Goji berries can be washed and dried with kitchen paper.

Place the walnuts on a baking sheet and bake in the oven at 150° for seven or eight minutes.

Take out the roasted walnut kernels, rub them off and break them into small pieces. (It doesn’t matter if you don’t rub the skin or break it apart)

Put the roasted walnut kernels, cut red dates, wolfberry, and black sesame seeds into a container and mix evenly. The black sesame seeds I bought today are cooked and do not need to be fried. If it is raw, it needs to be fried or roasted in the oven for a few minutes.

The mold should be lined with oil paper in advance. (Preparations for laying greased paper in the container must be done in advance. After the ingredients are mixed, they need to be shaped very quickly. It is too late to lay greased paper now.)

Boil sugar juice: Add a little water to a non-stick pan, add brown sugar and boil until the brown sugar melts, then pour in maltose and simmer over medium heat. Malt is relatively thick and sticky, especially when the temperature is low, so it is not easy to pour out. You can put the maltose and the bottle in warm water for a while. After the maltose softens, it can be poured out very smoothly.

As the cooking water evaporates, the maltose will slowly thicken. You can use a shovel to stir it up to make the heating more even and prevent the bottom from being smeared during the cooking process.

Simmer until the sugar liquid can be lifted up with a spatula and a large flag can be hung on the sugar juice, then the sugar juice is ready. The black sesame, red date and walnut cake made after boiling to this extent is not hard and chewy. If you want to eat something harder, just keep cooking it for a while.

After the malt sugar is boiled, turn down the heat to the minimum and quickly pour in all the ingredients.

Stir quickly and mix evenly so that the sugar juice coats all the ingredients.

After mixing well, quickly pour the black sesame walnut cake into a container lined with oil paper.

Press quickly to shape, and be sure to press hard, making sure there are no gaps. This will allow the ingredients to stick together more tightly and prevent them from falling apart when cutting. You can use a rolling pin to roll it out. Anyway, just press it as hard as you can.

After compacting and shaping, turn it upside down when it is still warm, and use a sharp knife or serrated knife to slice or cut into pieces according to your favorite size. Be sure to take out the slices while they are still warm. It will be very hard and brittle when cut when cool, and it will not cut well and will break into pieces. If it's too hot, the slices will fall apart.
