I have used a bread machine to make steamed buns many times. They are called hedgehog buns, but in fact there is nothing inside. I sometimes put ham sausage inside. My daughter and I made the hedgehog together. She has done it many times and is very skilled at it. I sometimes tell her that she can use plasticine to make a hedgehog, but the plasticine cannot be eaten.

Pour the yeast into warm water, mix well, and let it soak for 5 minutes; add flour, sugar, and sweet potatoes in a bread bucket

Pour the yeast water into the bread bucket and press P9 to automatically mix the dough for 18 minutes

After mixing, press P10 to automatically ferment the dough for 1 hour and 30 minutes

After fermentation is completed, press P9 again to automatically mix the dough for 18 minutes (air removal)

Boil the water in the steamer and turn off the heat (do not open the lid to maintain the temperature inside)

Take out the dough from the bread machine, divide it into several pieces, and mix well

Cover a warm steamer with gauze or rice dumpling leaves, and put the prepared sweet potato and hedgehog in it

Cover the lid and wait for 30 minutes (this is the second fermentation, which is very important. You can open the lid at any time during the second fermentation to see if the dough has become larger)
