Braised Bean Noodles

Overview

I made a meal for lunch and my husband said that this noodle is my favorite. The braised noodles are chewy and go well with the vegetables inside. He likes to eat them~

  1. Wash the beans, remove the two stems and break them into little finger-long sections. Cut the potatoes into small pieces with a hob. Marinate the lean meat with cooking wine and light soy sauce and a small amount of starch and set aside. Dried chili segments, ginger slices, and garlic slices are set aside

  2. Heat a pan with a little oil, fry the marinated meat until half cooked, and set aside

  3. Add a small amount of oil to the pan and stir-fry the ginger, garlic, dried chili until fragrant

  4. Stir-fry the beans in the pot, stir-fry for as long as possible

  5. Add potatoes and stir-fry, add appropriate amount of dark soy sauce, chicken essence, salt, five-spice powder, and pepper powder and stir-fry

  6. Add boiling water, cover the vegetables and bring to a boil until the vegetables are slightly exposed to the soup. Check if there are any missing seasonings and add them all at once

  7. Shake the handmade noodles evenly and cover the soup. The noodles are enough for three people

  8. Lower the heat slightly, cover the pot and simmer for 3 minutes

  9. Then take off the lid of the pot and use chopsticks to flip it over, so that the soup that is not stuck on the top is flipped to the bottom, and simmer for another two minutes

  10. Finally, open the lid of the pot and use chopsticks to shake it up, mix well and serve. The braised noodles are slightly dry and delicious~
