Soak the dried fungus in rice water. It only takes an hour in summer. Remove the stems, wash them and tear them into small florets.

Add water to the pot and directly add the soaked fungus, bring to a boil over medium heat and simmer for two to three minutes

Take out the cooked fungus, drain and drain, and set aside.

Chop millet and mince garlic

Personally, I like a high proportion of light soy sauce when mixing fungus. I just need to add less vinegar to enhance the flavor. In a small bowl, add appropriate amount of light soy sauce, sugar, vinegar, sesame oil, and sesame oil according to personal preference, mix thoroughly and set aside.
-
Put the water-controlled fungus into a plate, add minced garlic and chili pepper into the prepared soy sauce, and it's ready to serve.
-
When eating, just pour the sauce on the fungus. It's spicy and delicious.
