Overview
This colorful auspicious cloud yogurt cloud toast is my favorite. It not only looks good in shape, but also has a good meaning. Bake a few during the New Year to make it even more festive. The color I used is natural fruit and vegetable powder. Although the color is not very bright, it is healthy and soft in color. Except for the strong matcha flavor, everything else tastes very mild and does not compete with each other's taste.

Preparing ingredients; liquid ingredients need to be refrigerated for several hours, which can delay the temperature rise when beating the dough and facilitate film formation.

Put all the ingredients except butter and salt into the kneading bucket and knead out a rough film; the water absorption of flour, the consistency of milk and yogurt are different, you can reserve 20 grams of milk, and add as appropriate depending on the condition of the dough.

Add butter and salt.

Beat at low speed first to incorporate the salt and butter into the dough, then turn to medium-high speed. The dough will be soft, delicate and shiny, and can form a transparent and elastic film.

Prepare 6 colors of fruit and vegetable powder.

Cut 6 pieces of dough each weighing 20 grams, add fruit and vegetable powder and knead evenly, then ferment with the large dough for 1 hour at 28°C.

Double the size of the dough.

Gently beat the large dough to deflate, divide into 4 equal parts, roll into oval shape, and rest for 15 minutes.

Deflate the colored dough and divide each into 4 equal parts.

Roll out the large dough into a long strip of about 40 centimeters. Cut the 6 kinds of colored dough into small pieces and place them on the noodles at will.

Roll into rolls.

Place it in the Sanneng SN2414 cloud toast box; the dough capacity can be 130-160 grams; the less dough, the corners will be rounded, and the internal structure will be uniform; the more dough, the corners will be firm, and the structure will be tighter.

Temperature 38, humidity 80, fermentation is 8 minutes full, close the lid.

Put it into the middle rack of the preheated oven. If the oven space is small, you can place it on the middle and lower racks and heat up and down to 180 degrees for 22 minutes.

After taking it out of the oven, shake the mold, remove it from the mold, and let it cool on a drying rack before eating.
