Wash the peeled tender peas in water and cut the lean meat into slices.

Put sweet potato starch, dark soy sauce, and cooking wine in a large bowl and mix well.

Heat the oil in a pan, add the peas and fry briefly.

Add enough water and boil for one minute.

Add the meat slices and scatter them.

Bring to a boil over high heat.

Add an appropriate amount of salt, add some chili pepper if you like it spicy, and boil for about three minutes before serving.
