Chop the ribs into small pieces and wash them.

Boil water in a pot.

Wash and control the water content of the blanched pork ribs.

Put the ribs into a casserole, add water, bring the ginger slices to a boil over high heat, then reduce the heat to medium-low and simmer for more than 1 hour.

Peel the lotus root, wash and cut into pieces.

Peel the carrots, wash and cut into pieces.

Stew the ribs for about 1 hour, add the lotus roots and continue simmering.
