Coffee Cookies
Overview
I suddenly wanted to drink coffee on a whim. I bought a can but didn’t drink much of it. It’s delicious to make snacks with it!

Soak the coffee powder in boiling water and set aside.

After the butter has softened, add the powdered sugar and mix well.

Use a whisk to beat until the volume becomes larger and the color becomes white. Add the egg liquid in small amounts and multiple times (I added it in 6 times) and mix well. After each addition, beat well and then add the next time.

Add coffee liquid and stir evenly.

Add low-gluten flour and mix with a spatula until there is no dry flour left.

Pour into the baking pan, bake at 180 degrees, upper and lower heat, middle layer, for about 18 minutes.
