Cut avocado into cubes and set aside

Beat the eggs and set aside. Because it was for my husband and me, we used three eggs. If we were eating it alone, one egg and half fish would be just right.

Cut the Longli fish into pieces and drain them with kitchen paper.

Pour a small spoonful of olive oil into a frying pan (or an ordinary non-stick pan. I use a Korean medical stone pan. It’s not too easy to use. I completely fall in love with it). Heat it for a minute. Pour in the egg liquid and stir-fry. If the oil is heated for too long, the fried eggs will not be tender.
