Pickled bamboo shoots and roasted pork
Overview
Bamboo shoots are rich in protein, amino acids, fats, sugars, calcium, phosphorus, and carotene. Bamboo shoots are rich in nutrients, so eat less if you have stones. If you want to buy the kind of bamboo shoot tips (tender bamboo shoots), you need to soak them in cold water for 24 hours, and then press them in a pressure cooker for half an hour. Cut into shreds and soak for half a day, set aside.

Soak the bamboo shoots and cut into shreds.

Boil the pork belly in boiling water for five minutes and cut into small pieces.

Heat a wok, add a little oil, and add 4 pieces of rock sugar. When the rock sugar melts, add the cut meat and stir-fry until golden brown. Add onions, ginger, light soy sauce, and dark soy sauce and stir-fry for a few times. Add bamboo shoots, stir-fry for a few minutes, and add white wine. Add boiling water to cover the bamboo shoots.

Simmer over low heat until the water dries up, then adjust the flavor. Take it out, sprinkle with chopped green onions, and dinner is ready. You can add some red pepper shreds to make it look better. I didn’t buy the red pepper because it was expensive. You can add some chicken essence for better flavor. Because it’s expensive, my family doesn’t use chicken essence.
