Just the right amount of noodles.

Mix well.

Steam over cold water for 20 minutes.

Cut tomatoes into small pieces.

Wash the long beans and cut into two finger lengths.

Wash appropriate amount of soybean sprouts and set aside.

Heat an appropriate amount of oil in a pot (a little more oil), stir-fry ginger, green onions, Sichuan peppercorns, and dried red pepper until fragrant.

Add tomatoes.

Sauté until the tomatoes are soft.

Add the long beans and soybean sprouts.

Stir fry twice.

Season with appropriate amounts of salt, light soy sauce, and dark soy sauce.

Turn over twice and turn off the heat and set aside. This step does not require frying, it will be steamed later.
