Candied haws

Candied haws

Overview

Candied haws on a stick is a traditional Chinese snack that originated in the Southern Song Dynasty. It is made by skewering wild fruits with bamboo skewers and then dipping them in maltose syrup. The syrup hardens quickly when exposed to the wind. It is a common snack in northern winter. Generally, hawthorns are strewed into syrup. When frozen, it tastes sour, sweet and very icy.

  3. These are glutinous rice flour plus strawberry powder 🍓 matcha powder and mango powder 🥭 mix it and steam it in a pan for about 10 minutes. I steamed 50g glutinous rice flour + 25g powder. There is no requirement for the right amount.

  5. The key to boiling sugar is to find the right ratio of sugar and water. Pour 500g of sugar into the pot, add 250g of water, and pour the sugar and water into the pot. Boil the sugar over high heat, then slowly turn to low heat and cook until it bubbles and turns slightly yellow. Tilt the pot to the side of the candied haws. Turn around in the pot to stick the sugar, then let it cool and let it cool down. The one I took was taken when it was simmering over high heat. It was bubbling over low heat until it turned light yellow. I didn't have time to take a photo.
