Steps
-
First, make the caramel cream: prepare 45g extra white sugar, 45g light cream at room temperature, and 20g water. Put the sugar and water into a pot and bring to a simmer over low heat.
-
When the sugar liquid reaches caramel color and begins to smoke, quickly pour in the whipping cream, immediately turn off the heat, and stir continuously until the two are completely mixed.
-
This is the caramel cream, cool and set aside.
-
Next make the pumpkin jelly. Steam the pumpkin in advance, put it into a mixing container, add sugar and cold water, and stir into pumpkin liquid.
-
Soak gelatine sheets in cold water until soft.
-
Then squeeze out the water from the gelatine sheets and melt them into liquid over hot water.
-
Pour the pumpkin liquid into the gelatine liquid and stir evenly to form pumpkin jelly liquid.
-
Prepare the mousse cup, pour the pumpkin jelly liquid to 1/3 of the cup, and place it in the refrigerator for about 10 minutes to solidify.
-
Mousse liquid: Use the same method to melt the gelatine sheets, pour the caramel cream into the gelatine liquid, and stir evenly.
-
Use an electric mixer to beat the whipped cream until 7 minutes in a time and is slightly flowing.
-
Pour the caramel cream into the whipped cream and mix well to form a caramel mousse liquid.
-
Take out the mousse cup, pour the caramel mousse liquid to 2/3 of the cup, and freeze for 10 minutes.
-
Then take out the solidified mousse cup, pour in the remaining pumpkin puree until it is full, and freeze again until solidified.
-
After taking it out, use cheese slices (or white chocolate chips) to carve out the pig's snout.
-
Use chocolate beans to make the piggy’s eyes and use chocolate sauce to draw the piggy’s nostrils.
-
Carve out the pig's ears from the skin of a peach.
-
Finally, select the redder skin part of the peach and carve out two small circles to make the piggy’s face. Then use chocolate sauce to draw the pig’s mouth.
