Peel the chicken legs and cut into pieces, soak the mushrooms, winter bamboo shoots, and green peppers into pieces.

Blanch the winter bamboo shoots to remove oxalic acid, then remove them.

Seasoning preparation.

Chop the Pixian bean paste, dry yellow sauce, noodle sauce, tomato sauce, light soy sauce, sugar, and cooking wine to make the sauce.

Add oil to the pan and fry the chicken legs until they change colour, add onions and stir-fry until fragrant, then remove.

Put oil in the pot and fry carrots, green peppers and winter bamboo shoots until they are raw.

Pour into the casserole along with the chicken legs, add the sauce and appropriate amount of hot water.

Bring to a boil over high heat and simmer for 15 minutes.

Finally add green peppers and mushrooms and continue cooking for 5 minutes.
