Mixed eggplant
Overview
Eggplant is rich in nutrients and has many functions, but eggplant absorbs oil. Braised or stir-fried, it will taste better with more oil. In order to eat eggplant regularly while avoiding excessive intake of fat, the best solution is to steam the eggplant and mix it with food. When mixed with it, you can prepare a variety of sauces to suit your own taste. My version uses garlic chili sauce as the main condiment, and it tastes quite good.

Wash the eggplant

Add water to the steamer, put the eggplant into the steamer and steam until cooked

Let the steamed eggplant cool, tear into strips and place on a plate

Add garlic chili sauce

Add salt and sugar and mix well

Add light soy sauce and mix well

Add olive oil and mix well to form a sauce

Pour the sauce over the eggplant
