Vegetarian Fried Bitter Melon
Overview
Although autumn has already begun, the autumn tiger is still as powerful. In this hot weather, eating some bitter melon is very beneficial to the body. Bitter melon has the effects of increasing appetite, improving eyesight, aiding digestion, cooling and detoxifying, and diuretic. Today, the bitter melon is grown in my own garden without any pesticides or chemical fertilizers, it is a pure green organic vegetable.

Wash the freshly picked bitter melon, remove the pulp and cut into slices.

Chop the ginger and shallots and set aside.

Pour a little rapeseed oil into a hot pan, turn down the heat, add Sichuan peppercorns, ginger, shallots, and a spoonful of Pixian watercress to stir-fry until red oil is produced, then add the chopped bitter gourd and stir-fry evenly over high heat.

Add water to cover the bitter melon.

When the water is boiled away, add half a spoonful of chicken essence and stir-fry evenly.
