Put butter in a small bowl, soften at room temperature and set aside

Rinse the corn kernels, drain and set aside

I chose raw pine nuts and used pliers to peel out the whole pine nut kernels. If it is easier to buy fried open pine seeds and peel them, you can ignore this step and the next step.

There is a layer of seed coat on the peeled pine nuts. Place in the oven at 120 degrees for 3 to 5 minutes, and the pine nuts will be toasted. Gently rub off the seed coat and set aside

Cut carrots and green peppers into small pieces and set aside

Heat the wok over medium-low heat, add the butter, and after it is completely blended, add the carrot cubes and stir-fry for one minute

Add green pepper diced and continue to stir-fry for one minute

Add corn kernels and continue to stir-fry for three minutes

Add pine nuts and stir-fry for a few times, add a spoonful of sugar and an appropriate amount of salt. Stir well and turn off the heat.
