Cold Bitter Melon
Overview
The climate has been dry recently, and I always want to eat something to dispel internal heat. Bitter melon is the best choice. When it comes to bitter melon, many people are afraid of its bitter taste. In fact, it is not too bitter when made with the right method. What I remember most vividly is a friend I met many years ago who drank raw bitter melon juice in order to lose weight. I was curious and took a sip. It was probably the most bitter bitter melon I have ever tasted.

Wash the bitter melon and cut it into 4 pieces, remove the flesh

Cut the bitter melon into thin slices

Shred green onions

Boil water in a hot pot, add appropriate amount of salt and white vinegar, add bitter melon after the water boils, take out the bitter melon before the water boils

Pour cold water twice

Heat oil in a pan, add some Sichuan peppercorns, fry slowly over low heat until fragrant, turn off the heat, take out the Sichuan peppercorns and discard

Wash and shred the bell pepper

After the bitter gourd is dehydrated, add shredded green onion, shredded chili pepper, salt, chicken essence, white sugar and fried pepper oil and mix well
