You can only eat this kind of chewy and delicious tofu skin in your hometown, so I often buy it when I go home. It can be stir-fried or cold. When I see there is some at home, I mix it with cucumber. People in the north often eat cold dishes. My parents love to eat cold dishes. They also add green onions. It tastes very good and refreshing~

Wash the cucumber and cut into thin strips.

Cut the tofu skin into thin strips.

Blanch the tofu skin in boiling water for one minute.

Rinse the blanched tofu skin with cold boiled water, drain the water and put it in a basin.

Add shredded cucumber and green onion into the basin.
