Everyone is making Liangpi, have you done it? Making your own Liangpi face wash is a big project, but I don’t need to wash my face. I can make the dough in 15 minutes. It feels so good to eat a bowl of Liangpi noodles! Don’t be biased against Liangpi without washing your face, and don’t think it’s unauthentic. This is actually a very common practice in Shaanxi, and the ingredients can be matched according to your own preferences. It is worth a try! Liangpi has a long history. Legend has it that it originated during the period of Qin Shihuang and has a history of more than 2,000 years. There are two types of Liangpi: rice noodles and dough noodles. The ones that are not washed are called Liangpi, those that are washed are called dough noodles, and the ones that need to roll the batter are called dough noodles. Nowadays, it costs at least 6 yuan to buy a serving of cold noodles, and the cost of making it yourself is less than 2 yuan. Now that I have learned how to make it, I don’t have to buy it anymore, it is convenient and fast, and it tastes pretty good.

  1. Put 200 grams of flour into a bowl, add 2 grams of salt, and mix well. Add water little by little to avoid lumps.

  2. Be sure to stir until there is no dry powder, cover it with plastic wrap and let it sit for about 15 minutes. The resting process will make the dough become delicate.

  3. After the dough has been left to rest, add 150 grams of water in multiple batches, three or four times, and stir evenly each time before adding the next time. This will reduce the formation of dough lumps. After all is added, it will look like the picture, a thicker paste.

  4. Bring a pot of water to a boil, dry the pizza pan and brush it with oil. Scoop an appropriate amount of batter and shake to spread the batter evenly.

  5. Place the pizza pan into a pot of boiling water, cover the pot and steam over high heat for 2-3 minutes. Open the lid and see that the dough has puffed up.

  6. Remove the pizza pan from the pan, place it in a basin filled with water, let it cool for a while, then peel off the dough. Code one sheet at a time. To prevent adhesion, apply a little oil on each sheet.

  7. Put cucumber shreds, mung bean sprouts and cut cold skin into a bowl, and add some chopped peanuts.

  8. Pour in the peppercorn oil, garlic, sesame paste, chili oil, light soy sauce, sugar, mature vinegar, and sesame oil, and mix well.

  10. This method is the most common in Shaanxi. Every household will make it. Steam the cold skin, top it with your own oily spicy seeds, and eat a big bowl of it. It is really enjoyable.
