  3. Cut off one end of the lotus root joint (about 3 cm, keep the lotus root joint for later use) to expose the lotus root hole, then wash the hole and drain the water. Wash the glutinous rice, soak it in water overnight, dry it, pour the glutinous rice into the lotus root through the cut part, plug the end tightly with bamboo chopsticks, then close the cut lotus root joint, and tie it tightly with a small bamboo skewer to prevent rice leakage.

  4. Cut a section of lotus root and close it, and secure it with a bamboo skewer to prevent rice leakage.

  5. Add the lotus root stuffed with glutinous rice, red dates, brown sugar, and rock sugar into the pot, bring to a boil over high heat, and simmer over low heat for 2 hours. (I cooked it for 2.5 hours longer)
