Wash and drain chicken wing roots

Add a little star anise, Sichuan peppercorns, ginger slices, 1 tbsp dark soy sauce, 1/2 tbsp cooking wine, 1 tbsp oyster sauce, 1 tbsp salt, a little mushroom soaking water and mix well

Marinate it

Prepare green onion slices, ginger slices, and dried red pepper

Soak the mushrooms and drain the water

Cut into small pieces

Green pepper diced

Dice garlic

Sauté scallions, dried red chili peppers, and ginger slices in oil until fragrant

Pour in chicken wing roots

Add 1 tbsp dark soy sauce and stir-fry until browned

Stir fry until the wings are colored

Pour in the mushroom cubes, add 1 tablespoon of salt and 1 tablespoon of mushroom water and mix well

Cover and simmer over low heat

Wait until the soup thickens

Pour in the green pepper cubes and diced garlic and stir-fry. Add 1 tablespoon of chicken powder and stir-fry again.
