After washing the fish, make a few cuts on the back of the fish, add ginger slices, cooking wine and an appropriate amount of salt, spread evenly, and marinate for five minutes;

Heat a pan, add pickled ginger slices and fry it, then put the fish with a thin layer of flour on the surface into the pan and fry;

Fry one side until golden brown, then flip and fry the other side until golden brown;

After frying the fish, add appropriate amount of cooking wine, light soy sauce and bean paste;

Cover and simmer for five minutes. Continuously pour the soup on the surface of the fish and turn it over in between;

Add in the eggplant prepared with the hob and cook together;

Cook for two or three minutes, then turn over and cook for a while;

Add garlic granules and cook for one minute, then reduce the juice over high heat;

Finally, put it on a plate and sprinkle some chopped green onions.
