Prepare materials

Strain the passion fruit and extract the juice (75g)

Cut the cake slices and set aside.

Soak gelatine sheets in cold water until soft (20g)

Squeeze the soaked gelatine sheets (10g) and put them into the milk (30g)

Let it melt

Add coconut milk (35g) to passion fruit juice (30g) and beat evenly, then add milk mixed with gelatin and beat evenly

Whip the light cream (70g) until it is 60% and cannot flow

Add to coconut milk paste and beat evenly.

Place a piece of cake at the bottom of the mousse ring

Then pour some of the mousse

Place a cake slice on top of the mousse and pour the mousse liquid over it. After pouring, put it in the refrigerator for about 1 hour

Add another soaked gelatine sheet (10g) to the remaining (35g) passion fruit juice

Add sugar (25g) and melt over water.

After refrigeration, pour the passion fruit juice on top and spread it

Continue to refrigerate for 3 to 4 hours before serving.
