Prepare a box of northern tofu, blanch the whole box in cold water, turn the pot to low heat and simmer for ten minutes to remove the beany smell. After the tofu is blanched, use kitchen paper to drain the surface moisture, then cut it into thick slices with a knife.

Dice green and red peppers, slice garlic, and mince chives, set aside.

To prepare bowl sauce, the ratio is: two spoons of cooking wine + half a spoon of vinegar + half a spoon of light soy sauce + one spoon of Korean hot sauce + one spoon of black bean hot sauce + three spoons of water + garlic slices + green and red peppercorns + one teaspoon of sugar.

Heat some oil in a pot, add tofu in 50% oil, fry on one side until golden brown, then set aside (no need to turn it over).

Leave the oil in the original pot, pour the prepared bowl of juice and bring to a boil over low heat, then add the fried tofu, wrap it in the sauce, simmer briefly and then take it out of the pot.

Garnish with scallions.
