Beef Brisket Curry
Overview
There is a big bag of beef brisket that my parents brought back at home, and they are all made into curry at once, which is enough for 8-10 people.

Thaw brisket ahead of time.

After rinsing the blood, use kitchen paper to absorb excess water.

Cut the beef brisket into pieces, put it into clean water, boil it, discard the dirty water, and wash it well.

After the beef brisket has passed through the water, pour another pot of water, bring it to a boil, then reduce the heat to medium and simmer until it becomes tender. It takes approximately 1 hour and 20 minutes. (Forgot to take a photo, used this instead).

Clean the vegetables and cut into cubes and set aside.

Heat oil in a pan, add onions and saute until fragrant. Then add potatoes and carrots and stir-fry.

Pour the stewed beef brisket together with the soup and bring to a boil over high heat.

Add the curry cubes and stir constantly to melt.

Cook until thicker and turn off the heat.

Take another soup pot, boil water, add yellow pepper and broccoli, cook until cooked, remove and set aside.

Plate rice, top with curry, and place yellow peppers and broccoli on top.
