Fresh meat and oil dumplings
Overview
Fresh meat dumplings are the most traditional popular snacks in Shanghai. They are made from fermented glutinous rice flour, stuffed with pork and fried. When I was a kid, I had to go to town to buy a dumpling. I always wanted to learn how to make it, but I didn’t know how to make it until someone shared this snack on our food channel. I like to cook delicious food, but what I cook at home has nothing to do with authenticity. If you are looking for authenticity, please pass by.

Prepare the ingredients (the minced pork is seasoned)

Add yeast to water and mix well

Pour into glutinous rice flour and knead into a smooth dough

Cover with a damp cloth and leave in a warm place for 2 hours to make the inside of the dough loose

The fermented dough will become dry. Add about 20 grams of water and knead again. Divide into 40 grams of dough and roll into balls

Take a piece of dough and shape it into a round shape with your hands. Add the meat filling

After closing the tiger's mouth, roll it into a round shape until everything is done

Pour oil into the pot, add warm oil

Fry over medium heat until the skin changes color and becomes wrinkled

Turn to high heat and wait until the oil temperature rises, then fry in the pan until the skin is golden brown. Remove and control the oil
