Ma Xiang Coffee Spare Ribs
Overview
The weather in Shanghai is getting colder and colder. I bought pork ribs. I want to drink a bowl of hot soup, but my husband, who is from the northeast of my hometown, wants to eat strong-flavored pork ribs. The tastes in the north and the south are different. What should I do? After folding it up, boil it first and then stir-fry it, and come up with a new flavor of nondescript pork ribs. Eat two dishes in one dish, which fully satisfies the different tastes of the couple.

Ingredients
Steps
-
Take the pork ribs + ginger slices + garlic + cooking wine + a dozen peppercorns (you can also add white radish or lotus root cubes), cover with water, put the pressure cooker in the pressure cooker for 30 to 45 minutes according to the amount and simmer the soup, then use a strainer to drain the ribs and set aside. (The remaining soup with an appropriate amount of salt is another dish)
-
Cut chilli padi into small pieces and set aside (add or subtract according to your own taste);
-
Put an appropriate amount of oil in the wok, add star anise, a tablespoon of Sichuan peppercorns, and Chili padi and sauté until fragrant (the amount of Sichuan peppercorns and Chili padi here is adjusted according to personal taste. If you like spicy food, you can put more, if you can't eat it, you can add less or not. My husband likes it slightly spicy, but he can't eat spicy food, so I didn't put in Chili padi when frying the pan);
-
Add the pork ribs and stir-fry for a few minutes;
-
Prepare the coffee and pour it into the rib pot; (coffee can be replaced with ordinary three-in-one coffee, or bagged coffee can be brewed in advance, but I prefer Korean ready-to-drink coffee, which has a stronger coffee flavor, but is processed with low sugar and low calories, making it healthier)
-
1:1:1 Add one tablespoon each of extremely fresh flavor, dark soy sauce, and mature vinegar. If the extremely fresh flavor is not available, you can use light soy sauce instead. However, I personally think that the extremely fresh flavor is more delicious than ordinary light soy sauce, so you don’t need to add MSG;
-
Cover and simmer until the juice is reduced, then serve on a plate and sprinkle raw chilli padi on the surface.
