Pan-fried lotus root and dace fish cake
Overview
Dace is spiny and many people don't like to eat it, but its meat is very tender and very delicious when used to make fish cakes. The pan-fried dace fish patties I made today are filled with diced lotus root, which adds a crispy texture. It is very delicious and can be eaten with rice or wine.

Add salt and pepper to the chopped dace meat and stir clockwise until it becomes gelatinous. [I chopped this myself. It took 4 dace fish to chop one pound of clean dace meat. For those who don’t know how to chop, you can ask a blender to do it for you]

Dice lotus root.

Chop green onions.

Mix diced lotus root, chopped green onion, and dace meat together and stir evenly.

Heat the wok, add oil, roll the mixed fish cake into a ball, put it into the pan, press it gently with a spatula to turn the fish into a cake shape, and fry slowly over low heat. Fry the fish patties until golden brown on both sides and serve. It can be dipped in Thai sweet and spicy sauce or eaten wrapped in lettuce.
