  1. Soak the vermicelli in warm water and rinse well.

  2. Add cooking wine, salt and light soy sauce to the minced meat, mix well and marinate for a while.

  3. Chili sauce, onion, ginger and garlic are chopped and set aside.

  4. Heat oil in a pot, add ginger and garlic and sauté until fragrant.

  5. Add the minced meat and stir-fry until it changes color.

  6. Add cooking wine, light soy sauce and chili sauce and stir-fry until red oil is produced.

  7. Add the vermicelli and stir-fry until soft, add water, cover and simmer for two minutes.

  8. Add oyster sauce and reduce the juice over high heat.

  9. Finally, add a little chicken essence to taste and sprinkle with chopped green onion.
