Soak the vermicelli in warm water and rinse well.

Add cooking wine, salt and light soy sauce to the minced meat, mix well and marinate for a while.

Chili sauce, onion, ginger and garlic are chopped and set aside.

Heat oil in a pot, add ginger and garlic and sauté until fragrant.

Add the minced meat and stir-fry until it changes color.

Add cooking wine, light soy sauce and chili sauce and stir-fry until red oil is produced.

Add the vermicelli and stir-fry until soft, add water, cover and simmer for two minutes.

Add oyster sauce and reduce the juice over high heat.

Finally, add a little chicken essence to taste and sprinkle with chopped green onion.
