Steps
-
Divide 400 grams of flour into three parts: 200 grams, 100 grams, and 100 grams. Mix 200 grams of flour with yeast powder, warm water, and 10 grams of sugar to form a white dough; mix 100 grams of flour with yeast powder, carrot juice, and 5 grams of sugar to form a yellow dough; mix 100 grams of flour with yeast powder, vegetable juice, and 5 grams of sugar to form a green dough.
-
Knead the dough until the surface is smooth, cover with a lid or plastic wrap, and let rise in a warm place until doubled in size.
-
Dip your index finger in flour and poke a hole in the middle. If the hole does not collapse or shrink back, or you can see that the inside of the dough has formed a honeycomb shape, it is ready to ferment.
-
Knead the fermented dough until the surface is smooth.
-
Knead the yellow dough, green dough, and half of the white dough into long strips, and use the other half of the white dough for stuffing.
-
Cut the long dough of three colors into equal pieces.
-
Roll the small portions into thin strips of about 40 cm.
-
Now start braiding the colored balls using the rope as a demonstration. Make two thin strips into a group. Stack the two thin strips crosswise, overlap the left and right sides of one of them, pull the leftmost strip over and press the second strip. Pull the rightmost strip from under the third strip and press the second strip. Repeat this action until the end is glued.
-
Divide the remaining half of the white dough into corresponding equal portions and wrap each portion with purple sweet potato and coconut filling.
-
Slowly roll the wrapped buns into the braided colored balls and shape into a round ball.
-
Place it on a steamer covered with a drawer cloth, leaving a gap in the middle, because it will expand during steaming. Let it rise for a second time for 20-30 minutes (adjust the rising time according to the temperature) until it doubles in size.
-
Bring the water to a boil over high heat, steam over medium heat for 20 minutes, turn off the heat, and simmer for 5 minutes before uncovering the pot.
